|Black Bean Quinoa Salad (4 servings):|
|1 cup||Quinoa, dry|
|1 can (15 oz)||Black beans, drained and rinsed|
|2 small||Orange bell peppers, chopped|
|1 small||Yellow onion, chopped|
|3 cups||Kale, chopped|
|1 cup||Lemon juice|
|0.5 cup||Feta cheese, crumbled|
- In a large saucepan, bring to a boil 1 cup of quinoa and 2 cups of water. Reduce heat to low and simmer, covered for about 15-18 minutes.
- Once quinoa is tender and all the water is absorbed turn off heat. Stir in orange bell pepper, kale, onion and lemon juice. Transfer into a bowl and chill in the fridge until ready to serve.
- Before serving, stir in the crumbled feta cheese. Top with sliced avocado if desired.
