Black Bean Quinoa Salad (4 servings): | ||
1 cup | Quinoa, dry | |
1 can (15 oz) | Black beans, drained and rinsed | |
2 small | Orange bell peppers, chopped | |
1 small | Yellow onion, chopped | |
3 cups | Kale, chopped | |
1 cup | Lemon juice | |
0.5 cup | Feta cheese, crumbled |
Directions:
- In a large saucepan, bring to a boil 1 cup of quinoa and 2 cups of water. Reduce heat to low and simmer, covered for about 15-18 minutes.
- Once quinoa is tender and all the water is absorbed turn off heat. Stir in orange bell pepper, kale, onion and lemon juice. Transfer into a bowl and chill in the fridge until ready to serve.
- Before serving, stir in the crumbled feta cheese. Top with sliced avocado if desired.
