 Black Bean Quinoa Salad (4 servings):
1 cup Quinoa, dry
1 can (15 oz) Black beans, drained and rinsed
2 small Orange bell peppers, chopped
1 small Yellow onion, chopped
3 cups Kale, chopped
1 cup Lemon juice
0.5 cup Feta cheese, crumbled

 

Directions:

  1. In a large saucepan, bring to a boil 1 cup of quinoa and 2 cups of water. Reduce heat to low and simmer, covered for about 15-18 minutes.
  2. Once quinoa is tender and all the water is absorbed turn off heat. Stir in orange bell pepper, kale, onion and lemon juice. Transfer into a bowl and chill in the fridge until ready to serve.
  3. Before serving, stir in the crumbled feta cheese. Top with sliced avocado if desired.
