Chickpea, Quinoa and Cauliflower Salad (6 servings):
1 tbsp. Olive oil
1 medium cauliflower, cut in florets Cauliflower
2 cans, rinsed & drains Chickpeas
2 cups, cooked Quinoa
¾ cup Honey mustard
½ cup Cherry tomatoes
½ cup, chopped Parsley



  1. Preheat over to 400F
  2. In a large bowl, mix cauliflower and olive oil
  3. On a lined baking sheet, spread out the dressed cauliflower
  4. Bake at 400F for about 45 minutes or until cauliflower is golden brown
  5. Place cooked quinoa and cauliflower in a large serving bowl
  6. Mix in the remaining ingredients
