Chickpea, Quinoa and Cauliflower Salad (6 servings): | |
1 tbsp. | Olive oil |
1 medium cauliflower, cut in florets | Cauliflower |
2 cans, rinsed & drains | Chickpeas |
2 cups, cooked | Quinoa |
¾ cup | Honey mustard |
½ cup | Cherry tomatoes |
½ cup, chopped | Parsley |
Directions:
- Preheat over to 400F
- In a large bowl, mix cauliflower and olive oil
- On a lined baking sheet, spread out the dressed cauliflower
- Bake at 400F for about 45 minutes or until cauliflower is golden brown
- Place cooked quinoa and cauliflower in a large serving bowl
- Mix in the remaining ingredients
