High-Protein Vegetarian Salad (1 serving)
2 cups Mixed leafy greens 500 mL
1 Tbsp. Hemp seeds 15 mL
1 Tbsp. Pumpkin seeds 15 mL
1 Hard-boiled egg 1
½ cup Chickpeas 125 mL
½ cup Cherry tomatoes 125 mL


Directions: Combine ingredients together as a salad and top with your favourite dressing, or make your own with olive oil and balsamic vinegar.
