|Oatmeal Pancakes (4 serving):|
|1 cup||Oats, dry||250 mL|
|1 cup||Whole wheat flour||250 mL|
|1 tsp.||Baking soda||5 mL|
|1 tsp.||Baking powder||5 mL|
|1 cup||Vanilla yogurt||250 mL|
|½ cup||Milk||125 mL|
|¼ cup||Vegetable oil||60 mL|
Directions: In a large bowl mix together oats, whole wheat flour, baking soda and baking powder. In a separate bowl, mix together yogurt, milk, eggs and vegetable oil. Add wet ingredients to dry ingredients and mix until combined.
Heat a lightly oiled frying pan on medium heat. Scoop the batter into the frying pan. Brown on both sides and serve hot.
*If you prepare the batter the night before, it might be very thick in the morning. Add a little milk or water to bring it back to the right consistency.
