Oatmeal Pancakes (4 serving):
1 cup Oats, dry 250 mL
1 cup Whole wheat flour 250 mL
1 tsp. Baking soda 5 mL
1 tsp. Baking powder 5 mL
1 cup Vanilla yogurt 250 mL
½ cup Milk 125 mL
2 Eggs
¼ cup Vegetable oil 60 mL

Directions: In a large bowl mix together oats, whole wheat flour, baking soda and baking powder. In a separate bowl, mix together yogurt, milk, eggs and vegetable oil. Add wet ingredients to dry ingredients and mix until combined.

Heat a lightly oiled frying pan on medium heat. Scoop the batter into the frying pan. Brown on both sides and serve hot.

*If you prepare the batter the night before, it might be very thick in the morning. Add a little milk or water to bring it back to the right consistency.
