Oatmeal Pancakes (4 serving): | ||
1 cup | Oats, dry | 250 mL |
1 cup | Whole wheat flour | 250 mL |
1 tsp. | Baking soda | 5 mL |
1 tsp. | Baking powder | 5 mL |
1 cup | Vanilla yogurt | 250 mL |
½ cup | Milk | 125 mL |
2 | Eggs | |
¼ cup | Vegetable oil | 60 mL |
Directions: In a large bowl mix together oats, whole wheat flour, baking soda and baking powder. In a separate bowl, mix together yogurt, milk, eggs and vegetable oil. Add wet ingredients to dry ingredients and mix until combined.
Heat a lightly oiled frying pan on medium heat. Scoop the batter into the frying pan. Brown on both sides and serve hot.
*If you prepare the batter the night before, it might be very thick in the morning. Add a little milk or water to bring it back to the right consistency.
