1.5 cups | All purpose flour |
1 tsp. | Baking soda |
1 tsp. | Baking powder |
1 tbsp. | Cinnamon |
1 cup | Pumpkin puree |
0.5 cup | Applesauce, unsweetened |
0.5 cup | Egg white |
0.5 cup | Sugar |
2 tbsp. | Canola oil |

Directions: Preheat oven to 350F. Mix together whole wheat flour, baking soda, baking powder and cinnamon. In a separate bowl, beat together the remaining ingredients. Pour liquid mixture into dry ingredients and stir until moistened. Fill muffin cups and backing for 28-30 minutes. Makes 12 muffins.
